Chewy Green Tea Chip Cookies

I love all things green tea! As long as it's green tea, I'm game to try, good or bad (well nothing bad so far). I always stop for a piece of green tea glazed Paris-Brest on the way to my regular bakery supply store, always. Sometimes I even make up excuses just to buy, let's say plain flour? Which I can honestly get from the local grocery.  

It's utterly inconvenient to make a detour (or excuses) all the time and I'm resolute to put the addiction to a stop (or at least try)! I figure the only way is to have a regular supply of green tea goodies. So here comes the chewy green tea chip cookies. It's soft chewy cookies except with pipe-your-own green tea chips! Yes really! And it's easier than you think :)

Ingredients
Green Tea Chips
  • 2 cups white chocolate chips
  • 2½ tbs green tea powder
Directions
  1. Set the white chocolate chips in a water bath on low heat
  2. Whisk it slowly until all are melted and smooth
  3. Add green tea powder and stir until completely dissolved 
  4. Fill the green tea mixture in a pastry bag
  5. Pipe the mixture to shape like chips 
  6. Set a side for an hour or until hardened
Chewy cookies
  • 2¾ cups plain flour (or all-purpose)
  • 1 tsp  baking soda
  • ½ tsp baking powder 
  • ½ tsp salt   
  • 1 cup butter (salted), softened
  • 1½ cup caster sugar
  • 1 egg
  • 1 vanilla pod, scrapped
  • 4 tbs strong-brewed green tea

Directions
  1. Preheat oven to  180°C
  2. Sift plain flour, baking soda, baking powder and salt, set aside
  3. Whisk softened butter and sugar until light and creamy on low speed in a mixing bowl
  4. Add egg, scrapped vanilla beans and green tea 
  5. Slowly blend in flour mixture in batches until well combine
  6. Once ready, fold in green tea chips to the mixture 
  7. Line a baking tray with baking sheet and scoop the dough using a tea spoon to the tray
  8. Place each dollop 1 inch apart and gently press down the dough with palm 
  9. Bake for 10-15 minutes, depending if you want the cookies soft or slightly crisp on the sides. Oh please do not eat it right off the tray!
  10. Let it harden a little on the tray before transferring it to cool completely on a wire rack. Now you take a bite :)
Sorry, I didn't count how many pieces this recipe produced. Maybe 35-40? More than enough to fit my large cookie jar, ha :)

With all the goodness I can muster, I gave most of the cookies to my work mates. Well you can't give just give to one, you've gotta share it with everyone right? :) On the bright side, it's so awesome, I'm bound to make it again! But in fact I suffer from swollen gums now because I ate too many pieces (on every batch) right off the oven. Ouch! Talk about eager beaver...
