I love all things green tea! As long as it's green tea, I'm game to try, good or bad (well nothing bad so far). I always stop for a piece of green tea glazed Paris-Brest on the way to my regular bakery supply store, always. Sometimes I even make up excuses just to buy, let's say plain flour? Which I can honestly get from the local grocery.

Ingredients
Green Tea Chips
- 2 cups white chocolate chips
- 2½ tbs green tea powder
- Set the white chocolate chips in a water bath on low heat
- Whisk it slowly until all are melted and smooth
- Add green tea powder and stir until completely dissolved
- Fill the green tea mixture in a pastry bag
- Pipe the mixture to shape like chips
- Set a side for an hour or until hardened
- 2¾ cups plain flour (or all-purpose)
- 1 tsp baking soda
- ½ tsp baking powder
- ½ tsp salt
- 1 cup butter (salted), softened
- 1½ cup caster sugar
- 1 egg
- 1 vanilla pod, scrapped
- 4 tbs strong-brewed green tea

Directions
- Preheat oven to 180°C
- Sift plain flour, baking soda, baking powder and salt, set aside
- Whisk softened butter and sugar until light and creamy on low speed in a mixing bowl
- Add egg, scrapped vanilla beans and green tea
- Slowly blend in flour mixture in batches until well combine
- Once ready, fold in green tea chips to the mixture
- Line a baking tray with baking sheet and scoop the dough using a tea spoon to the tray
- Place each dollop 1 inch apart and gently press down the dough with palm
- Bake for 10-15 minutes, depending if you want the cookies soft or slightly crisp on the sides. Oh please do not eat it right off the tray!
- Let it harden a little on the tray before transferring it to cool completely on a wire rack. Now you take a bite :)

With all the goodness I can muster, I gave most of the cookies to my work mates. Well you can't give just give to one, you've gotta share it with everyone right? :) On the bright side, it's so awesome, I'm bound to make it again! But in fact I suffer from swollen gums now because I ate too many pieces (on every batch) right off the oven. Ouch! Talk about eager beaver...
